I have been on a huge spinach salad kick recently. They're so easy to throw together! I change up toppings daily and supplement with any leftovers I have in the fridge - hence the roasted veg.

Bento #22


- Seasoned Veggie Crumbles
- Braised Cabbage and Apples
- Egg Noodles with Peas

I just realized that this looks like toddler food. It was still good. After my trip to the orchard last week I ended up with 20 lbs of apples. What do you do with 20 lbs of apples? Cook and bake them into every food item you consume for the next month of course! I'll have to post the braised cabbage and apple recipe later. It's probably not what you'd be expecting and it's delicious. We were huddled around the pan picking little bites out while we waited for it to finish cooking. It was that good.

- Chickpea Burger
- Cucumber Salad
- Steamed Corn

I've noticed that since I've been working out more I've turned into a bottomless pit. I find myself absolutely starving all the time. To counter act this I've been trying to bump up my protein intake. I made these burgers after one of my work outs this week and they were perfect - delicious & filling.

I used this recipe with a few modifications. I used whole grain bread in place of white, chives in place of scallions, and then added 1/2 tsp red pepper flake for some heat. I also threw in some extra almonds for added texture. Instead of eating them with Mayo we chose mustard and Sriracha hot sauce with lettuce and tomato. So good!

The cucumber salad on the side is literally just cucumbers, greek yogurt, salt and pepper. The cold creaminess was perfect against all the heat I added to the burgers. I'll be making these again.

My cousin recently turned me on to a new way to make stir fry. She starts with a base of soy sauce, vinegar and honey and then adds a few more flavors usually based on what she has available. For mine I added ginger paste and Cheyenne. It's really good!

Bento #19

It's not fall yet and I know they aren't in season, but last week I spotted some butternut squash at the store and couldn't resist. Butternut squash curry is one of my favorite meals.

- Brown Rice
- Cilantro
- Sour Cream
- Lime Wedges
- Butternut Squash Curry

In India curry just means sauce and has nothing to do with the common yellow American curry powder. If you aren't a fan of curry powder and tend to shy away from anything with Curry in it's name I would encourage you to keep trying. This curry is seasoned with fresh ginger, mustard seeds, fennel seeds and coriander. I tend to like a lot of spice so I doubled the spice amounts and quadrupled the red pepper flake. Tasty. The cilantro adds a level of freshness and the sour cream paired with the fresh lime juice is to die for! Forgive the pic - it's another office photo.

- Chopped Salad (Romaine, Carrots & Edamame)

- Veggie Bolognese (Veggie Crumbles, Bell Peppers, Red Onion, Asparagus)

My cousin Annie always makes her own pasta sauce. She starts with a couple cans of chopped tomatoes and a generous swirl of olive oil and builds from there. The sauce is a great catch all for any leftover produce in the fridge. Mine is never as good as hers. This one came close.

- Grilled Veggie Italian Sausage

- Grilled Mexican Corn
- Honey Corn Bread

We've been grilling out A LOT. I'm really not complaining. I've been adding chili seasoning to my corn after pulling it off the grill and it oozes mexican street corn flavor. Sooooo good! We grill the veggies alongside the meat and fake meat in a perforated grill pan that we bought specifically for them. Well worth the purchase. I'm pretty sure it was under $10.

The house purge has been keeping me busy but I'll have a progress report and some camping pics coming up shortly!

  • - Pad See Ew Tofu

I am a Thai food addict. If I could I would probably eat Thai food multiple times a week. My favorite dish is Pad See Ew. It is composed of wide rice noodles stir fried with broccoli, egg and your choice of meat or tofu. The light sauce is sweetened with tamarind (another popular ingredient in mexican cooking). I LOVE how chewy the noodles are! Perfect for chopsticks.

The dish is generally very mild, but I like it with some heat so I usually dose it with chili sauce. The vinegar from the chili sauce paired with the sweetness of the tamarind is to die for. If you've not tried it before, I would highly recommend giving it a try! ? Do you have a favorite Thai dish? What is it?

Fear not, the brown shade on the broccoli is from soy sauce. It's one of our favorite ways to prepare broccoli. We steam it and then dress it with soy sauce and lemon juice to taste. The soy sauce prevents us from needing to to add salt and the lemon adds a fresh twist. The combo is a great light alternative to butter (Not that it prevents me from adding butter to the potatoes - I'm not a communist).

Bento #13

Spring veggies are starting to show up in the grocery stores again. I am sooo excited. I can't wait to get planting and start visiting farmers markets! This bento features some amazing zucchini I picked up. Please excuse the crap photo. It was taken with my phone. Impossibly graceful me managed to drop my camera again and it was being repaired.
